- 2 medium zucchinis (about 400g), chopped
- 1 cup feta cheese (150g), crumbled
- 3 large eggs
- 1/2 cup grated Parmesan cheese (50g)
- 1/4 cup fresh dill or parsley (30g), chopped
- 3 tbsp extra virgin olive oil (45ml)
- 1 medium onion, diced
- 1/2 cup panko breadcrumbs (30g)
- Salt and pepper to taste
Instructions
- Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
- Chop zucchini into bite-sized pieces, sprinkle with salt, and let sit in a colander for 10 minutes to draw out moisture.
- In a skillet, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes).
- In a large bowl, combine sautéed onions with drained zucchini, crumbled feta, eggs, grated Parmesan, herbs, and pepper. Mix well.
- Transfer mixture to the greased baking dish. Top with panko breadcrumbs mixed with olive oil.
- Bake for 30-35 minutes until golden brown on top.
