Ingredients

  • 2 medium zucchinis (about 400g), chopped
  • 1 cup feta cheese (150g), crumbled
  • 3 large eggs
  • 1/2 cup grated Parmesan cheese (50g)
  • 1/4 cup fresh dill or parsley (30g), chopped
  • 3 tbsp extra virgin olive oil (45ml)
  • 1 medium onion, diced
  • 1/2 cup panko breadcrumbs (30g)
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a baking dish with olive oil.
  2. Chop zucchini into bite-sized pieces, sprinkle with salt, and let sit in a colander for 10 minutes to draw out moisture.
  3. In a skillet, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes).
  4. In a large bowl, combine sautéed onions with drained zucchini, crumbled feta, eggs, grated Parmesan, herbs, and pepper. Mix well.
  5. Transfer mixture to the greased baking dish. Top with panko breadcrumbs mixed with olive oil.
  6. Bake for 30-35 minutes until golden brown on top.
