  • 1 large egg (room temperature)
  • 1 tsp vanilla extract
  • 8 oz mascarpone cheese (fresh)
  • Cocoa powder (for dusting)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large bowl, cream together the butter, granulated sugar, and brown sugar until light and fluffy.
  3. Beat in the egg and vanilla extract until fully incorporated.
  4. In another bowl, sift together the flour, cocoa powder, espresso powder, and a pinch of salt. Gradually add this to the wet mixture.
  5. Gently fold in the mascarpone cheese until just combined.
  6. Drop spoonfuls of dough onto a parchment-lined baking sheet about 2 inches apart.
  7. Bake for 10-12 minutes until edges are firm but centers remain soft.
