  • 8 oz rotini pasta
  • 2 cups fresh corn (cut from about 2 ears)
  • 1 cup diced red bell pepper
  • 1/2 cup finely chopped red onion
  • 1/4 cup chopped cilantro
  • Juice of 1 lime (about 2 tbsp)
  • 1/2 cup mayonnaise
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Cook the pasta in salted boiling water until al dente. Drain and cool slightly.
  2. Grill or boil fresh corn until tender. Cut kernels off the cob.
  3. In a large mixing bowl, combine corn, red bell pepper, and red onion.
  4. In a separate bowl, whisk together mayonnaise, lime juice, chili powder, salt, and pepper.
  5. Pour the dressing over the vegetable mixture and add the pasta. Toss gently until well combined.
  6. Add chopped cilantro and mix again.
  7. Chill in the refrigerator for at least 30 minutes before serving.
