Ingredients

  • 6 large eggs
  • 1/4 cup mayonnaise
  • 1 tsp Dijon mustard
  • 1/4 cup finely diced red bell pepper
  • 1/4 cup crushed blue corn tortilla chips
  • Salt and pepper to taste

Instructions

  1. Boil the eggs for 10-12 minutes in a pot of gently boiling water.
  2. Cool the eggs in an ice bath for easier peeling.
  3. Once cooled, peel the eggs and slice them in half lengthwise. Remove the yolks into a mixing bowl.
  4. Mash the yolks with mayonnaise, Dijon mustard, salt, and pepper until smooth.
  5. Fold in diced red bell pepper and crushed blue corn tortilla chips for color and crunch.
  6. Fill each egg white half with the yolk mixture using a piping bag or spoon.
  7. Garnish with additional crushed chips or reserved bell pepper bits.
