- 2 ripe peaches, pitted and chopped
- 1/4 cup brown sugar
- 2 tsp smoked paprika
- 1 tbsp apple cider vinegar
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp olive oil
Instructions
- Rinse and pat dry the pork ribs. Remove the silver skin for better seasoning absorption.
- In a bowl, combine brown sugar, smoked paprika, garlic powder, salt, and pepper to make the rub.
- Generously apply the spice rub on both sides of the ribs.
- Preheat your grill to medium heat (350°F). Place ribs bone-side down on indirect heat and grill for about 1 hour.
- While grilling, blend peaches with apple cider vinegar until smooth. Brush this mixture onto the ribs every 15 minutes.
- Cook until the internal temperature reaches 190°F; let rest for 10 minutes before slicing.
