Ingredients

  • 2 cups fresh cucumbers, sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 cup crumbled feta cheese
  • 1/4 cup red onion, thinly sliced
  • 3 tbsp extra virgin olive oil
  • 2 tbsp freshly squeezed lemon juice
  • 2 tbsp fresh dill or parsley, chopped
  • Salt and pepper to taste

Instructions

  1. Wash and slice cucumbers; place them in a large bowl.
  2. Add halved cherry tomatoes to the bowl with cucumbers.
  3. Soak sliced red onion in cold water for 10 minutes to reduce sharpness; then drain and add to the bowl.
  4. In a small bowl, whisk together olive oil, lemon juice, salt, and pepper. Adjust seasoning as desired.
  5. Fold in crumbled feta cheese and chopped herbs into the cucumber mixture along with the dressing.
  6. Chill in the refrigerator for at least 30 minutes before serving.
