  • 9 lasagna noodles (no-boil)
  • 1 cup pumpkin puree (100% pure)
  • 1 cup ricotta cheese (whole milk)
  • 2 cups fresh spinach (lightly sautéed)
  • 1 ½ cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 2 cups marinara sauce

Instructions

  1. Preheat your oven to 375°F (190°C) and cook the lasagna noodles according to package instructions until al dente.
  2. In a bowl, mix together pumpkin puree, ricotta cheese, sautéed spinach, Italian seasoning, and half of the mozzarella until well combined.
  3. Lay out each noodle flat and spoon about 1/4 cup of the filling onto one end. Roll tightly and place seam-side down in a greased baking dish.
  4. Pour marinara sauce over the rolled noodles, then sprinkle remaining mozzarella and Parmesan on top.
  5. Cover with aluminum foil and bake for 25 minutes. Remove foil and bake for an additional 10-15 minutes until bubbly and golden brown.
