  • 2 large eggs (room temperature)
  • 8 oz cream cheese (softened)
  • ½ cup caramel sauce (for drizzling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners.
  2. In a large bowl, mix pumpkin puree, granulated sugar, brown sugar, and eggs until smooth.
  3. Gradually sift in flour, baking powder, cinnamon, nutmeg, and salt; stir until just combined.
  4. In another bowl, blend cream cheese with remaining sugar until creamy.
  5. Spoon muffin batter into each cup halfway full; add a dollop of cream cheese filling and cover with more batter. Drizzle caramel sauce on top.
  6. Bake for 20-25 minutes or until a toothpick comes out clean.
