  • 2 tsp baking powder
  • 1 cup granulated sugar
  • ½ cup unsweetened pineapple juice
  • 1 cup canned pineapple chunks, drained
  • ½ cup unsalted butter, softened
  • 2 large eggs
  • ½ cup whole milk
  • ½ cup cherry jam
  • 2 cups powdered sugar (sifted)

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare cupcake tins with liners.
  2. In a bowl, whisk together flour and baking powder; set aside.
  3. Cream softened butter and sugar until fluffy. Add eggs one at a time, mixing well after each addition.
  4. Mix in the pineapple juice and drained pineapple chunks gently until combined.
  5. Fold the dry ingredients into the wet mixture until just incorporated.
  6. Fill cupcake liners two-thirds full with batter and bake for 18-20 minutes or until golden brown.
  7. Cool cupcakes in pans for 5 minutes before transferring to wire racks to cool completely.
  8. Whip together cherry jam and powdered sugar to make the frosting; frost cooled cupcakes.
