  • 4 cups butternut squash, peeled and diced
  • 1 lb Italian sausage (sweet or spicy)
  • 8 fresh sage leaves, chopped
  • 1 cup full-fat cottage cheese
  • 2 large eggs
  • 2 cups shredded mozzarella cheese
  • ½ cup grated Parmesan cheese
  • 2 tbsp olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced butternut squash with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for about 25 minutes until tender.
  3. In a skillet over medium heat, cook the Italian sausage until browned. Add chopped sage halfway through cooking.
  4. In a bowl, mix cottage cheese, eggs, half of the mozzarella, salt, and pepper until well combined.
  5. In a baking dish, layer roasted butternut squash, sausage mixture, and cheese blend repeatedly until ingredients are used up.
  6. Top with remaining mozzarella and Parmesan. Cover with foil and bake for 30 minutes; then remove foil and bake for an additional 15 minutes until golden brown.
