- 4 cups butternut squash, peeled and diced
- 1 lb Italian sausage (sweet or spicy)
- 8 fresh sage leaves, chopped
- 1 cup full-fat cottage cheese
- 2 large eggs
- 2 cups shredded mozzarella cheese
- ½ cup grated Parmesan cheese
- 2 tbsp olive oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 400°F (200°C).
- Toss the diced butternut squash with olive oil, salt, and pepper. Spread evenly on a baking sheet and roast for about 25 minutes until tender.
- In a skillet over medium heat, cook the Italian sausage until browned. Add chopped sage halfway through cooking.
