- 3 tbsp lemon juice (for glaze)
Instructions
- Warm the milk until slightly hot to the touch. Mix yeast and sugar in a bowl, add warm milk, and let it sit for about 5 minutes until frothy.
- In another bowl, whisk together flour and salt. Gradually mix into the yeast mixture along with melted butter and lemon zest until combined.
- Knead dough on a floured surface for about 5-7 minutes until smooth and elastic.
- Place dough in a greased bowl, cover, and let rise in a warm area until doubled in size (about 1 hour).
- Roll out the dough into a rectangle; sprinkle fresh raspberries evenly over it and roll tightly from one end to the other.
- Cut into 1-inch slices, arrange on a greased baking tray, cover again, and let rest for another 30 minutes while preheating the oven to 375°F (190°C).
- Bake for about 20-25 minutes or until golden brown; allow cooling slightly before glazing.
- For the glaze, whisk powdered sugar with lemon juice until smooth, then drizzle over warm rolls.
