  • 2 ¼ tsp active dry yeast
  • ½ cup granulated sugar
  • 1 cup whole milk
  • ½ cup unsalted butter (melted)
  • 2 tbsp lemon zest
  • 1 cup fresh raspberries
  • 1 cup powdered sugar (for glaze)
  • 3 tbsp lemon juice (for glaze)

Instructions

  1. Warm the milk until slightly hot to the touch. Mix yeast and sugar in a bowl, add warm milk, and let it sit for about 5 minutes until frothy.
  2. In another bowl, whisk together flour and salt. Gradually mix into the yeast mixture along with melted butter and lemon zest until combined.
  3. Knead dough on a floured surface for about 5-7 minutes until smooth and elastic.
  4. Place dough in a greased bowl, cover, and let rise in a warm area until doubled in size (about 1 hour).
  5. Roll out the dough into a rectangle; sprinkle fresh raspberries evenly over it and roll tightly from one end to the other.
  6. Cut into 1-inch slices, arrange on a greased baking tray, cover again, and let rest for another 30 minutes while preheating the oven to 375°F (190°C).
  7. Bake for about 20-25 minutes or until golden brown; allow cooling slightly before glazing.
  8. For the glaze, whisk powdered sugar with lemon juice until smooth, then drizzle over warm rolls.
