  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 16 oz cream cheese, softened
  • 1 cup sour cream
  • 1 cup granulated sugar
  • Zest and juice of 2 fresh lemons
  • 2 tsp vanilla extract
  • 3 large eggs

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter. Press into the bottom of a 9-inch springform pan.
  2. Bake crust for 10 minutes until golden. Let cool.
  3. In another bowl, beat cream cheese until smooth. Gradually add sugar and mix well.
  4. Stir in sour cream, lemon juice, zest, and vanilla until combined.
  5. Add eggs one at a time, mixing gently after each addition.
  6. Pour filling over the cooled crust and smooth the top. Bake for 50-60 minutes until set but slightly jiggly in the center.
  7. Cool in the oven with the door ajar for an hour, then refrigerate for at least four hours or overnight before serving.
