  • 1 lb large shrimp, peeled
  • 4 tbsp unsalted butter
  • 4 cloves garlic, minced
  • Juice of 1 large lemon
  • 1 cup jasmine rice
  • 2 cups water
  • Fresh parsley, chopped (for garnish)
  • Salt and pepper to taste

Instructions

  1. Rinse 1 cup of jasmine rice until the water runs clear. In a saucepan, combine with 2 cups water and a pinch of salt. Bring to a boil, cover, and simmer for 15-20 minutes until tender.
  2. In a large skillet, melt 4 tbsp butter over medium heat. Add 4 minced garlic cloves and sauté for about 1 minute until fragrant.
  3. Add the peeled shrimp to the skillet and cook for 3-5 minutes until they turn pink. Squeeze in the juice of one lemon and stir to combine.
  4. Sprinkle with salt and pepper to taste, then add fresh parsley as a garnish.
  5. Fluff the cooked rice with a fork and plate with the shrimp mixture on top.
