Instructions

  3. Gradually mix in flour, baking powder, and lemon zest until just combined.
  4. Scoop the dough into the muffin pan, pressing down gently to form cups.
  5. Bake for 12-15 minutes until edges are lightly golden.
  6. While cooling, whisk together eggs, lemon juice, granulated sugar, and powdered sugar.
  7. Pour the lemon mixture into each cookie cup until almost full.
  8. Return to the oven for another 10-12 minutes until set but slightly jiggly.
  9. Let cool for at least 15 minutes before transferring to wire racks.
