Ingredients

  • 1 lb lean ground beef
  • 1 cup breadcrumbs
  • 1/2 cup chopped green onions
  • 3 cloves garlic, minced
  • 2 tbsp gochujang
  • 1 tbsp honey
  • 2 tbsp low-sodium soy sauce
  • Salt and pepper to taste
  • 1/2 cup full-fat mayonnaise
  • 2 tbsp sriracha sauce (adjust to taste)
  • 1 tbsp fresh lime juice

Instructions

  1. Preheat oven to 400°F (200°C).
  2. In a large bowl, mix ground beef, breadcrumbs, green onions, garlic, gochujang, honey, soy sauce, salt, and pepper until just combined.
  3. Roll mixture into balls (about 2 tablespoons each) and place on a parchment-lined baking sheet.
  4. Bake for 20 minutes until browned and cooked through.
  5. For the dip, whisk together mayonnaise, sriracha sauce, and lime juice until smooth.
  6. Serve meatballs with spicy mayo dip.
