Description

  • 2 cups fresh raspberries
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup unsalted butter (cold)
  • 1 tsp vanilla extract
  • 1/4 tsp salt
  • 1 tbsp lemon juice

Instructions

  1. Preheat the oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. For the crust, mix flour, granulated sugar, and salt in a bowl. Cut in cold butter until crumbly. Press into the bottom of the baking dish.
  3. In another bowl, toss raspberries with brown sugar, lemon juice, and vanilla extract. Spread over the crust.
  4. For the crumble topping, combine remaining flour, brown sugar, and cold butter until crumbly. Sprinkle over raspberries.
  5. Bake for 35-40 minutes until golden brown and bubbly around edges. Cool before slicing.
