  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 1/2 cup raw honey
  • 3 tbsp hot sauce (to taste)
  • 4 cups mixed fresh greens (romaine and spinach)
  • 1 cucumber, thinly sliced
  • 1 cup cherry tomatoes, halved
  • 1/2 red onion, thinly sliced
  • 2 tbsp olive oil
  • Salt and pepper, to taste

Instructions

  1. Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Season chicken breasts with salt and pepper on both sides.
  3. In a small bowl, whisk together honey and hot sauce until well combined.
  4. Place seasoned chicken on the baking sheet, brush half of the glaze over the chicken, then bake for 25-30 minutes until cooked through.
  5. While the chicken bakes, chop greens and mix them in a large bowl with sliced cucumber.
  6. Add cherry tomatoes and red onion to the salad mixture.
  7. Once cooked, let the chicken cool slightly before slicing it into strips.
  8. Arrange sliced chicken atop the salad base and drizzle with remaining glaze.
