- 1/2 cup raw honey
- 3 tbsp hot sauce (to taste)
- 4 cups mixed fresh greens (romaine and spinach)
- 1 cucumber, thinly sliced
- 1 cup cherry tomatoes, halved
- 1/2 red onion, thinly sliced
- 2 tbsp olive oil
- Salt and pepper, to taste
Instructions
- Preheat the oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Season chicken breasts with salt and pepper on both sides.
- In a small bowl, whisk together honey and hot sauce until well combined.
- Place seasoned chicken on the baking sheet, brush half of the glaze over the chicken, then bake for 25-30 minutes until cooked through.
- While the chicken bakes, chop greens and mix them in a large bowl with sliced cucumber.
- Add cherry tomatoes and red onion to the salad mixture.
- Once cooked, let the chicken cool slightly before slicing it into strips.
- Arrange sliced chicken atop the salad base and drizzle with remaining glaze.
