Description

Grilled Portobello Mushroom Tacos are a deliciously satisfying meal that brings the essence of summer barbecues right to your table. Each taco features marinated, grilled Portobello mushrooms, complemented by fresh toppings like creamy avocado, vibrant salsa, and crispy cabbage.   • 4 large Portobello mushrooms
  • 2 tbsp extra virgin olive oil
  • Juice of 1 lime
  • 1 tsp ground cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • 1 cup shredded cabbage
  • 1 avocado, sliced
  • 1 cup diced tomatoes
  • Fresh cilantro, for garnish
  • 8 corn or flour tortillas

Instructions

  1. In a medium bowl, whisk together olive oil, lime juice, cumin, garlic powder, salt, and pepper.
  2. Remove stems from Portobello mushrooms and marinate them in the mixture for at least 15 minutes.
  3. Preheat the grill to medium-high heat. Grill the mushrooms for about 5-7 minutes on each side until tender and charred.
  4. Warm tortillas on the grill or in a skillet for about 30 seconds per side.
  5. Slice grilled mushrooms and layer them onto tortillas. Top with shredded cabbage, diced tomatoes, avocado slices, and cilantro.
  6. Serve immediately with extra lime wedges.
