  • 2 ears fresh corn, grilled
  • 1 ripe avocado, diced
  • 1 cup cherry tomatoes, halved

  • 2 tbsp lime juice (freshly squeezed)
  • 2 tbsp extra virgin olive oil

Instructions

  4. Whisk together lime juice, olive oil, salt, and pepper in a small bowl.
  5. In a large bowl, mix cooked pasta, grilled corn kernels, diced avocado, halved tomatoes, red onion, and cilantro. Drizzle dressing over the salad and toss gently to coat.
