  • 1 can (14.5 oz) diced tomatoes
  • 2 cups elbow macaroni (uncooked)
  • 2 cups low-sodium beef broth
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste
  • 1 cup cheddar cheese, shredded (optional)

Instructions

  1. Heat olive oil in a large pot over medium heat. Add the chopped onion and sauté until translucent.
  2. Increase the heat slightly and add ground beef. Cook until browned, breaking it apart with a spatula (about 5-7 minutes).
  3. Stir in minced garlic and diced bell peppers; cook until softened.
  4. Add diced tomatoes and beef broth; bring to a gentle boil.
  5. Mix in uncooked elbow macaroni along with paprika, Italian seasoning, salt, and pepper. Simmer uncovered for about 15 minutes or until pasta is tender.
