- 8 oz rice noodles
- 1 cup bell peppers, thinly sliced
- 1 cup cucumber, julienned
- 1 cup carrots, shredded
- ½ cup fresh cilantro
- ½ cup creamy peanut butter
- ¼ cup low-sodium soy sauce
- 2 tbsp fresh lime juice
- 2 tbsp honey or maple syrup
- 1 tsp chili flakes (optional)
Instructions
- Boil water and cook rice noodles according to package instructions until tender. Drain and rinse under cold water.
- Slice bell peppers and julienne cucumbers and carrots.
- In a bowl, mix peanut butter, soy sauce, lime juice, honey or maple syrup, and chili flakes until smooth.
- In a large bowl, toss cooled noodles with chopped veggies. Drizzle the peanut sauce over everything and gently mix until well coated.
- Plate the mixture in bowls and garnish with fresh cilantro and crushed peanuts if desired.
