  • 1 lb lean ground beef or turkey
  • 1 cup diced bell peppers (mixed colors)
  • 1 medium yellow onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp taco seasoning
  • 1 cup tomato sauce
  • 1 cup low-sodium chicken broth
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup corn kernels (fresh or frozen)

Instructions

  1. Heat 2 tbsp olive oil in a large skillet over medium heat. Add chopped onions and bell peppers; sauté for about 5 minutes until softened.
  2. Stir in the ground beef or turkey; cook until browned, about 8 minutes. Break apart with a spoon.
  3. Add minced garlic and taco seasoning; stir until fragrant.
  4. Mix in rinsed rice, tomato sauce, and chicken broth. Bring to a simmer for about 5 minutes.
  5. Fold in black beans and corn; cook until heated through, about another 5 minutes.
  6. Fluff rice with a fork before serving. Top with fresh cilantro, avocado slices, or cheese as desired.
