Ingredients

Scale
  • 14 oz firm tofu, drained and pressed
  • 1 cup unsweetened coconut flakes
  • 1/2 cup pineapple juice (100% pure)
  • 2 tbsp soy sauce (low-sodium)
  • 1/2 cup all-purpose flour (or gluten-free flour)
  • 1/4 cup vegetable oil (canola or sunflower)
  • 1 cup fresh pineapple chunks
  • 2 tbsp honey or maple syrup
  • 2 tbsp freshly squeezed lime juice

Instructions

  1. Prepare Tofu: Drain and press the firm tofu between paper towels for about 15 minutes to remove excess moisture.
  2. Set Up Breading Station: In three shallow dishes, place flour seasoned with salt, whisked eggs (or flaxseed mixture), and unsweetened coconut flakes.
  3. Bread Tofu: Cut tofu into bite-sized cubes. Dip each cube in flour, then egg, and finally roll it in coconut flakes until thoroughly coated.
  4. Fry Tofu: Heat vegetable oil in a skillet over medium-high heat until shimmering. Fry tofu cubes in batches for about 3-4 minutes per side until golden brown and crispy.
  5. Make Pineapple Sauce: In a saucepan, combine fresh pineapple chunks, pineapple juice, honey (or maple syrup), and lime juice. Simmer over medium heat for 5-7 minutes until thickened.
  6. Serve: Plate the crispy tofu and drizzle generously with pineapple sauce. Garnish with fresh cilantro or sliced green onions if desired.
