  • 2 cups low-sodium vegetable broth
  • 1 medium sweet yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup heavy cream (or coconut milk for dairy-free)
  • 1 cup all-purpose flour
  • 1 cup grated sharp cheddar cheese
  • 2 tsp baking powder
  • 2 tbsp olive oil
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté diced onions until translucent (about 5 minutes).
  2. Add chopped tomatoes and vegetable broth; bring to a simmer for about 15 minutes.
  3. Use an immersion blender to puree the soup until smooth or leave some chunks for texture.
  4. Stir in heavy cream, and season with salt and pepper.
  5. In a separate bowl, mix flour, baking powder, grated cheese, and milk until just combined.
