Ingredients

  • 8 oz rotini pasta
  • 1 can (15 oz) black beans, rinsed
  • 1 cup fresh corn (preferably off the cob)
  • 1 cup cherry tomatoes, halved
  • 1/2 cup red onion, finely chopped
  • 1 cup bell peppers (mixed colors), diced
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 2 tbsp olive oil
  • Salt & pepper to taste

Instructions

  1. Cook the rotini pasta in salted boiling water until al dente. Drain and rinse under cold water.
  2. While the pasta cooks, chop the cherry tomatoes, bell peppers, red onion, cilantro, and corn into bite-sized pieces.
  3. In a large bowl, combine the cooked pasta with black beans and all chopped veggies.
  4. Drizzle lime juice and olive oil over the mixture; season with salt and pepper. Stir well to combine.
  5. Chill in the refrigerator for at least 30 minutes before serving to enhance flavors.
