Ingredients

  • 12 oz rotini pasta
  • 6 strips thick-cut bacon
  • 1 pint cherry tomatoes, halved
  • 3 cups romaine lettuce, chopped
  • 4 green onions, sliced
  • ½ cup mayonnaise
  • 2 tbsp apple cider vinegar
  • 1 tbsp Dijon mustard
  • Salt and pepper to taste

Instructions

  1. Cook rotini pasta in boiling salted water until al dente. Drain and rinse under cold water.
  2. In a skillet, cook bacon until crispy. Drain on paper towels and chop into pieces.
  3. In a large bowl, combine cherry tomatoes, romaine lettuce, green onions, and bacon.
  4. In another bowl, whisk together mayonnaise, apple cider vinegar, Dijon mustard, salt, and pepper.
  5. Fold cooled pasta into the vegetable mixture and pour dressing over it. Mix gently to coat evenly.
  6. Chill in the refrigerator for at least 30 minutes before serving.
