Description

Southwest Black Bean Salad Cups are a vibrant and flavorful appetizer that will transport you to a sun-soaked fiesta with every bite.   • 12 small tortillas
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup sweet corn (fresh or frozen)
  • 1 cup cherry tomatoes, halved
  • 1 ripe avocado, diced
  • 2 tbsp freshly squeezed lime juice
  • ¼ cup fresh cilantro, chopped
  • ½ tsp ground cumin
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 375°F (190°C). Lightly spray muffin tins with cooking spray and fit small tortillas into each cup shape. Bake until golden brown and crispy, about 10-12 minutes.
  2. In a large bowl, combine black beans, corn, cherry tomatoes, avocado, lime juice, cilantro, cumin, salt, and pepper. Stir gently to avoid mashing the avocado.
  3. Once tortilla cups have cooled slightly, spoon generous amounts of the bean mixture into each cup.
  4. Garnish with extra cilantro or feta cheese if desired. Serve immediately for the best texture.
