- 1 can (15 oz) black beans, rinsed and drained
- 1 cup sweet corn (fresh or frozen)
- 1 cup cherry tomatoes, halved

- ¼ cup fresh cilantro, chopped
- ½ tsp ground cumin
- Salt and pepper to taste
Instructions
- Preheat the oven to 375°F (190°C). Lightly spray muffin tins with cooking spray and fit small tortillas into each cup shape. Bake until golden brown and crispy, about 10-12 minutes.
- In a large bowl, combine black beans, corn, cherry tomatoes, avocado, lime juice, cilantro, cumin, salt, and pepper. Stir gently to avoid mashing the avocado.
