- 2 lbs Beef Chuck Roast
- 6 New Mexico Dried Chiles
- 1 large Yellow Onion, chopped
- 4 cloves Garlic, minced
- 2 tbsp Tomato Paste
- 1 tsp Ground Cumin
- 2 cups Beef Broth
- Salt and Pepper to taste
- 2 tbsp Olive Oil (for searing)
Instructions
- Prepare the chiles by removing stems and seeds. Soak them in boiling water for about 15 minutes until softened.
- Blend soaked chiles with garlic, onion, tomato paste, cumin, salt, and pepper in a blender. Add some soaking liquid to create a smooth sauce.
- Heat olive oil in a large pot over medium-high heat. Season the beef roast generously and brown on all sides.
- Return the beef to the pot and pour blended sauce and beef broth over it. Stir to combine.
- Cover and reduce heat to low. Let simmer for about 2 hours or until the beef is fork-tender.
- Shred the beef within the sauce before serving. Enjoy hot over rice or in tortillas garnished with fresh cilantro and lime wedges.
