  • 2 lbs Beef Chuck Roast
  • 6 New Mexico Dried Chiles
  • 1 large Yellow Onion, chopped
  • 4 cloves Garlic, minced
  • 2 tbsp Tomato Paste
  • 1 tsp Ground Cumin
  • 2 cups Beef Broth
  • Salt and Pepper to taste
  • 2 tbsp Olive Oil (for searing)

Instructions

  1. Prepare the chiles by removing stems and seeds. Soak them in boiling water for about 15 minutes until softened.
  2. Blend soaked chiles with garlic, onion, tomato paste, cumin, salt, and pepper in a blender. Add some soaking liquid to create a smooth sauce.
  3. Heat olive oil in a large pot over medium-high heat. Season the beef roast generously and brown on all sides.
  4. Return the beef to the pot and pour blended sauce and beef broth over it. Stir to combine.
  5. Cover and reduce heat to low. Let simmer for about 2 hours or until the beef is fork-tender.
  6. Shred the beef within the sauce before serving. Enjoy hot over rice or in tortillas garnished with fresh cilantro and lime wedges.
