- 8 small corn or flour tortillas
- 2 cups shredded green cabbage (about 150g)
- 1 cup grated carrots (about 100g)
- 2 tbsp freshly squeezed lemon juice
- ¼ cup chopped cilantro (optional)
Instructions
- Preheat your oven to 425°F (220°C).
- Toss the cauliflower florets in a large bowl with olive oil and BBQ sauce until evenly coated.
- Spread the cauliflower on a parchment-lined baking sheet and roast for 25-30 minutes until golden brown.
