  • 1 cup fresh water chestnuts, diced
  • 4 green onions, finely chopped
  • 3 cloves garlic, minced
  • 1 tbsp fresh ginger, grated
  • 3 tbsp low-sodium soy sauce
  • 1 tbsp sesame oil
  • 8 large lettuce leaves (butter or iceberg)
  • Fresh cilantro (optional)

Instructions

  1. Heat sesame oil in a skillet over medium heat. Sauté minced garlic and grated ginger until fragrant (about 30 seconds).
  2. Add the ground chicken or turkey, breaking it apart as it cooks. Stir until browned (5-7 minutes).
  3. Mix in the diced water chestnuts and chopped green onions; cook for another 2-3 minutes.
  4. Drizzle in soy sauce while stirring to coat the mixture evenly; cook for an additional minute.
  5. Rinse the lettuce leaves under cold water and pat dry.
  6. Spoon the filling into each lettuce leaf and top with cilantro if desired. Serve immediately.
